A healthy meal alternative and a great way to discover a new culture with your child. Explain that frittatas are the Italian version of omelets. Instead of folding in the filling, frittatas mix-in common Italian veggies, herbs and meats.

WHAT YOU NEED

12 eggs
1/2 cup mozzarella cheese, shredded
1 cup potatoes, cubed and cooked
1 small red onion
1 red pepper
1 cup baby spinach
2-4 tablespoons butter

HOW TO MAKE IT

1. Measure the potatoes and spinach. Set aside.

2. With a grown-up helper, carefully dice the red onion and cut the red pepper into bite-size pieces. Set aside.

3. Crack the eggs into a large mixing bowl. Add the milk and cheese. Whisk until well blended. Set aside.

4. With your grown-up helper, heat a large oven-safe frying pan on medium heat.

5. Melt the butter. Add the chopped onion and pepper. Saute for 5 minutes.

6. Add the spinach. Cook for 2 minutes.

7. Stir in the potatoes and egg mixture.

8. Cook for 7-8 minutes as you continuously stir the mixture being sure not to scrape the bottom.

9. When bottom is set, place pan under low temperature broiler until center sets and is cooked through.

10. Cool for 2-3 minutes. Remove from pan, cut, and serve. Mangia! Mangia!

Makes 6-8 servings
