Betsy in Groton emailed this delicious recipe to share with you. It's a hit with her kids and all their friends. The best part for Betsy is that "the kids have no idea that it is healthy for them." I agree. I love that it adds nutrition without sacraficing taste. Thanks Betsy!

WHAT YOU NEED

2 1/2 cups whole wheat flour
2 teaspoons baking soda
1 teaspoon salt
1/2 cup unsalted butter, room temperature
1/2 cup plain no-fat yogurt
little less than 1 cup sugar
4 large bananas (or 2 cups mashed)
4 eggs

Optional Add-ins:
-1 cup chopped walnuts or pecans
-1/2 cup chopped walnuts + 1/2 cup chocolate chips
-1 cup chocolate chips

HOW TO MAKE IT

1. Preheat the oven to 350 degrees. Grease and flour 2 medium loaf pans.

2. In a large mixing bowl, measure the wheat flour, baking soda, and salt. Stir together. Set aside.

3. In a medium mixing bowl, add the butter, yogurt, and sugar. Mix (or beat with a blender) until well blended.

4. Mash the bananas in a separate bowl or squish in a plastic bag.

5. Add the bananas and eggs to the "wet" mixture. Mix until blended.

6. Carefully pour the "wet" mix over the "dry." Stir until just mixed.

7. Stir in your optional add-ins.

8. Spread evenly into the 2 prepared pans.

9. Bake for 50-60 minutes or until a toothpick comes out clean from the center.

10. Cool in pans for 10 minutes. Remove and continue to cool or eat warm.

Makes 2 loaves
